Stuffed Eggplant & Ham Steak Cucumber Sauce

I enjoy taking old recipe books and recreating the recipes to work for a Keto and Low Carb Low Sugar Lifestyle. We enjoyed the Ham steak cucumber sauce; it was easy to throw together and I also used it as a dipping sauce for veggies.

I had never had eggplant, and after cutting it open, I was prepared to not like it, because it reminded me of Tofu. The texture, the smell, the feel of it; I thought, “I’m probably not going to care for this” We didn’t eat this the day I made it, because while preparing it, we filled up on other foods. So, I wrapped these and put them in the refrigerator overnight. The next day, I heated them in the microwave for 60 seconds. We were blown away by the flavor. We are seriously impressed, and this recipe is now added to my ‘make again file’. It is hard to take an appealing photo of eggplant dishes, but here ya go. I’m enjoying the recipes I’m finding in this book. The recipes are easy to convert to Keto Low Carb Low Sugar recipes.

Korean Cinnamon Tea

Remember when I made the pickled onions from the book: Made Whole by Cristina Curp, and I mentioned Star Anise? I ordered it from Amazon, because the local stores were out of it. I made the Korean Cinnamon Tea this morning and I’m addicted! This is so good! The recipe called for adding Stevia drops to your taste, but I didn’t need those, so I would add those as (optional) on the recipe.

Pickled Red Onions

I am now on the lookout for star anise so that I can try her Korean Cinnamon tea. On the first day of making the pickled red onions, they were fine, but I felt they were missing something. Two days later, I remembered I had pushed them to the back of the refrigerator, pulled them out just now, and thought, “wow, this would be good mixed with cucumbers, maybe green beans, maybe on a chili burger, on a cold cut, etc.” For now, these are fun to snack on. The vinegar definitely stands out, but what a fun way to eat red onions and enjoy the benefits of the apple cider vinegar. I’m planning on making several recipes from this book.

Keto Protein shake

How to Make a Keto Coffee Protein Shake:

I make this once a week, and add to a large mason jar. Keep jar in the refrigerator and have a small cup of this every other day, or I add it to the end of a cup of hot coffee.

I also go lighter on the swerve; I change the flavor often. For instance, I will add a few scoops of the chocolate protein, as well as a vanilla protein. SAMS had a small bottle of peppermint protein powder on clearance, after the holidays; so, I add a scoop of that with the chocolate now and then to this drink. It does taste like a chocolate milk shake. You just want to play with the sugar amount; it’s easy to add more if needed. I make my own cold brew coffee, but the cheaper large bottles work fine with this also.

Ranch Dressing

I have made a few recipes from the book Craveable Keto by Kyndra Holley (Author) after checking it out from the library. I immediately ordered the book, and I’m now jotting notes on pages of favorite recipes I have created from it.

These are the recipes I have made a few times now: Dill Pickle Coleslaw (my husband requests this often), Parmesan Roasted Broccoli, Boosted Coffee and Vanilla Coffee Creamer, Jon’s Special, and the Ranch Dressing, which I am dipping everything in , besides pouring it on my salad.

Pumpkin Pecan Pancakes

Pumpkin Pecan pancakes for lunch today – it was like having dessert, while having lunch (of course, with a side of bacon)

This made 7 (about 3″ wide) pancakes for me. I used a sugar free maple syrup and added a side of bacon. You can also try these with sugar free jam, or just butter, or maybe some cinnamon sugar (keto style), etc. I froze the remainder of these, and love knowing they are in the freezer when I want a quick breakfast.

Supreme Pizza Soup

The first recipe I tried from this thick book was the Supreme Pizza soup; because I had everything, and it is raining and cold outside. Jim ate 4 bowls immediately. Jim said the pepperoni slices are what made him think pizza. This soup is delicious.

I look forward to making many more dishes. I have added tabs to several pages. This is a nice size book, with color photos of every recipe. The recipes sound easy and yummy. The ingredients are easy to come by, if they are not already on your shelf. Most of these ingredients are already on my shelf.

I first came across Kyndra Holley books at my library. After trying many recipes, I started ordering the books online. I enjoy her blog: peaceloveandlowcarb, and her recipe creations.

This book does not disappoint.
