Asparagus Soup with Lemon and Parmesan

I had to do something with the Asparagus, because we got tired of it this past weekend after I made a large batch to go with our campfire foods. Jim did not want heavy cream in it, so I found this recipe on this blog called, “onceuponachef

This is delicious! I added adobe chili pepper and chili pepper flakes to my bowl, and it was perfect! Jim said this was so pleasant with this weather. I poured it in jars for us to heat up for the next several meals.

This is her photo of what you need for this recipe

Salsa Burgers and beans

When Jim makes salsa burgers – he always makes a lot. I have to figure out how to use them in recipes because I get tired of them. Chili has been done. Sloppy Joe sandwiches, and so on. With just a few left, I remembered a meal my best friends mother use to make for us kids when we were younger – there were six of us and her 4 – she served this with buttered bread and it was so good.

I only have 3 ingredients here:

Jim’s salsa burgers

Campbell’s Pork & Beans

sauteed onion

Mix together and heat. Jim had never had this before. He ate it all and said, “more please” So, I bought some hamburger, mixed in taco seasoning packet and the onion and beans. Super Easy.

Delicious with toasted garlic bread.

Special Fried Rice with Foo Yung

Perfect!

This dish is delicious!  My husband ate 4 bowls in one sitting!     I will make this again, and I will just scramble the foo yung part, and mix it into the rice.  Also, the Foo Yung recipe:  I did not add the salt – I did do pepper – I figured between all the other ingredients it did not need more salt and this was perfect for us.   I also had some leftover turkey cold cuts, so I chopped those up and included them with the ham and shrimp combination.

This book has so many recipes that look like every day staples I keep in the pantry.  I have marked several recipes I will be trying from this book.
I also added chopped carrots with the peas
I’m showing you a photo of this dish after following the instructions exactly – it is an ugly 1970’s looking dish.  I laughed and said, “Wow, that is so 70’s looking!”   I then chopped up the egg, and mixed it in.
