Pumpkin Pecan Pancakes

Pumpkin Pecan pancakes for lunch today – it was like having dessert, while having lunch (of course, with a side of bacon)

This made 7 (about 3″ wide) pancakes for me. I used a sugar free maple syrup and added a side of bacon. You can also try these with sugar free jam, or just butter, or maybe some cinnamon sugar (keto style), etc. I froze the remainder of these, and love knowing they are in the freezer when I want a quick breakfast.

From the book Beyond Simply Keto, by Suzanne Ryan

Supreme Pizza Soup

The first recipe I tried from this thick book was the Supreme Pizza soup; because I had everything, and it is raining and cold outside. Jim ate 4 bowls immediately. Jim said the pepperoni slices are what made him think pizza. This soup is delicious.

I look forward to making many more dishes. I have added tabs to several pages. This is a nice size book, with color photos of every recipe. The recipes sound easy and yummy. The ingredients are easy to come by, if they are not already on your shelf. Most of these ingredients are already on my shelf.

I first came across Kyndra Holley books at my library. After trying many recipes, I started ordering the books online. I enjoy her blog: peaceloveandlowcarb, and her recipe creations.

This book does not disappoint.

Asparagus Soup with Lemon and Parmesan

I had to do something with the Asparagus, because we got tired of it this past weekend after I made a large batch to go with our campfire foods. Jim did not want heavy cream in it, so I found this recipe on this blog called, “onceuponachef

This is delicious! I added adobe chili pepper and chili pepper flakes to my bowl, and it was perfect! Jim said this was so pleasant with this weather. I poured it in jars for us to heat up for the next several meals.

This is her photo of what you need for this recipe

Keto Celebrations: Low-Carb Dishes for Holidays and Special Occasions Paperback – July 14, 2020

by Mary Alexander

I checked this book out from my library. The recipe called for chicken, but I had leftover hamburger to use up. I will definitely make this with chicken.

I am so impressed with the recipes in this book, I have ordered a copy so that I can make notes in it.

cheese wraps

Horchata

I added a side salad; cabbage/kale dish and a celery stick with sugar free peanut butter. What a pleasant meal.

Chaffel BLT

Chaffel BLT; I use a mini waffle iron as I like to keep the cheese low on my diet. I have made the 1/2 cup of cheese and 1 egg ones also, and they are delicious.

I use a mini iron, because I it’s easy, quick and a small sandwich. I used a special melting cheese I found at Meijers, but you can use anything. I precook bacon, chop it, and add to a container for using in salads, stir-fry’s and now chaffels. I add the bacon to the cheese, before closing the iron. That way, the bacon stayed in, and was part of the sandwich. I enjoyed the crunch of the sandwich. Delicious, easy and fun idea.

I got this idea from an amazing fb page. The husband and wife cook and share some fantastic recipes. They are called: Let’s Celebrate Weight Loss (author: Chrissy Kruppenbach)

Keto Crunchy Granola

Game Changer for me! I just had a 1/4 cup of this with some strawberries and blueberries and a couple tablespoons of unsweetened almond milk. So delicious! I stored this in a large mason jar, in the fridge.

You do have to watch this closely; after the first 15 minutes, you stir and then watch in 5 minute increments – I put mine on a silicone mat – very easy to pour it directly in to a large mason jar, and store in the refrigerator.

The website I found this on has many many Keto friendly recipes, I have pinterest marked for future creations.

Summer Zucchini Soup

Delicious! We like this hot. You can do hot or cold. Jim asked me to save some for him when he gets off work.

This is what I am sipping on today after a big walk. This is so good. I followed the recipe, and then I added my own spices at the end (rosemary/garlic salt; Italian blend; green onions)

I will be making this often. I’m including photo of recipe and the book it came from.

Cauliflower Pizza

DELICIOUS! this is my first time making a pizza without the bread crust; I followed Dr Berg’s video on youtube, and OMGoodness! I’m impressed! Next time, I’ll add salami; one thing I did different than Dr. Berg, was I used a pizza screen with the parchment, and I added herbs to the crust and to the top. My husband is going to be impressed
