Cheesy Beef Taquitos

Keto Celebrations: Low-Carb Dishes for Holidays and Special Occasions Paperback – July 14, 2020

by Mary Alexander

I checked this book out from my library. The recipe called for chicken, but I had leftover hamburger to use up. I will definitely make this with chicken.

I am so impressed with the recipes in this book, I have ordered a copy so that I can make notes in it.

Horchata

I added a side salad; cabbage/kale dish and a celery stick with sugar free peanut butter. What a pleasant meal.

Keto Crunchy Granola

Game Changer for me! I just had a 1/4 cup of this with some strawberries and blueberries and a couple tablespoons of unsweetened almond milk. So delicious! I stored this in a large mason jar, in the fridge.

You do have to watch this closely; after the first 15 minutes, you stir and then watch in 5 minute increments – I put mine on a silicone mat – very easy to pour it directly in to a large mason jar, and store in the refrigerator.

The website I found this on has many many Keto friendly recipes, I have pinterest marked for future creations.

Cauliflower Pizza

DELICIOUS! this is my first time making a pizza without the bread crust; I followed Dr Berg’s video on youtube, and OMGoodness! I’m impressed! Next time, I’ll add salami; one thing I did different than Dr. Berg, was I used a pizza screen with the parchment, and I added herbs to the crust and to the top. My husband is going to be impressed

Honey Apple Crisp

Oh My! This is dangerously delicious. Jim and I want more, but I’d become ill from the sugar overload. Jim had 3 bowls. This will be my go to recipe from now on. This was very easy to make. I baked it in a cast iron skillet

The American Country Inn and Bed & Breakfast Cookbook: More Than 1,800 Crowd-Pleasing Recipes from 600 Inns (American Country Inn & Bed & Breakfast Cookbook) 1987

Hash Brown Ham quiche

Hash Brown Ham quiche in the cast iron skilled, and if the skillet is seasoned well; the quiche slides right out of it on to a platter

My 24 year old son, Alex said, “Did you put each piece of ham in an exact spot, while I was talking to you?” I laughed and said “no, I sprinkled them here and there “

He said, ”Wow! It looks like you did!” I said, “I do things instinctively, from years of cooking, I don’t even pay attention “.

But that was funny he thought that

I did review this, it was easy to put together and delicious

White chocolate, Peanut, and Caramel Candy cookies

Southern Living 2010 Ultimate Christmas cookbook

Jim asked for more of the Brie bites, which I’ve been making this past week by having fun with brie cheese, and a variety of marmalade’s

With the extra Brie cheese, I cut a few wedges and put on cookie sheet near cups. Mixed a bit of pear marmalade with white wine; heated in microwave and poured on top of cheese wedges. Added crushed walnuts on top of wine/pear/cheese wedge. Served with fire roasted Triscuit crackers which was a delicious combo

Southern Living is as always loaded with beautiful photos with fun ideas for decorating – some of the recipes seem to be very involved, but there are many that are appealing enough to want to invest the time.

Today, I made the White chocolate, Peanut, and Caramel Candy cookies on page 117. These took some time but they are chewy and delicious. I froze half the dough balls for later baking. Jim is enjoying them and eating as many as I leave out in sight – that is a compliment because he is so so on cookies. I used Rolos, and believe you can use other candy like snickers, etc.

This is a great way to use up leftover Halloween Candy. Yes, I will make these again. I’m now looking at the White chocolate-dipped oatmeal cranberry cookies on page 148.

White Chocolate Berry Muffins

The muffin top is crunchy, the inside is soft. The taste is fantastic.

This recipe works wonderfully with blueberries! The house smells delicious. I cannot wait to share these delicious muffins with my family.

I found this recipe in my Taste of Home’s Best Holiday Recipes 2008 edition. The recipe is on page 49, and it calls for raspberries, which I do not have, but I have plenty of blueberries and they work perfectly in this recipe. The recipes in this thick, beautiful magazine have photos that tempt you.

I will make these berry muffins again.

Easy Banana Bread and Strawberry Banana Bread

I had several bananas which I allowed to turn brown. I used 3 in this recipe, and followed it precisely. I had the oven light on and I watched this raise to a beautiful golden brown. I followed the bloggers tips, I checked it at 50 minutes, and although it looked done, the top was still doughy, so I tent foiled for another 5 minutes. This was so good, I decided to make a second loaf, and instead of a full tsp of vanilla, I stopped about 3/4 of a tsp and topped the tsp off with banana extract. The smell is amazing; the flavor over the top. The commenters are correct on one loaf not being enough, a 4×8 pan is smaller than the loaf pans I usually use, and it works perfectly for this loaf.

The Strawberry Banana Bread recipe came from the Taste of Home website. It is titled Raspberry Banana Bread. I froze one of the loaves. I did not have raspberries, so I used strawberries. The smell reminded me of a banana split. I first found this in my TOH’s Bread bonanza cookbook Volume 6, 2003 issue, on page 7. I baked for 60 minutes, here in Indiana.

Here is a link to the recipe: Raspberry Banana Bread

I’ll share a photo of how the banana bread rose above the pan
