Chestnuts roasting on an open fire……..

This is what Jim and I are doing every evening, and morning. We are gathering these to roast. This year I am going to try something new, I’m going to try and create my own Chestnut syrup for coffee. Fingers crossed.

We noticed a few more new trees growing on the property. They are over 10′ tall now, so in a few years, they’ll be producing. I was very happy to see these. They grow on their own, without our help, thanks to the deer stomping them, and spreading them; and probably the squirrels burying a few, and forgetting where they buried them.

We have gathered quite a few in the past few days. YUM!

Apricot Financiers

Apricot Financiers – these cute little bite size cakes are yummy! – I browsed my cookbooks and found something I had all the ingredients for (only 4 ingredients!) These are perfect because they are not too sweet – the sweetness is the apricot – these are made with almond paste –

Tips: The recipe says 30-40 minutes – 30 burned them – the second batch I did for 18 and it still would have been best at about 15 but the good thing is I only did a few on second batch to figure out the time so only do a few to figure out your time Second: I used cup cake liners for first batch – hard to get out – stuck to liners – second batch I just sprayed the mini muffin tin – perfect – came out easily I halved the recipe as I only had 8 oz. almond paste and half made a lot

also the next time I make these (and I will) I will add a small piece of apricot to the bottom of each cup before pouring batter over – I used a pastry bag as it is just easier for me to control portions. Also I let this sit in fridge over night before baking – the recipe recommends a few hours or overnight

Asparagus Soup with Lemon and Parmesan

I had to do something with the Asparagus, because we got tired of it this past weekend after I made a large batch to go with our campfire foods. Jim did not want heavy cream in it, so I found this recipe on this blog called, “onceuponachef

This is delicious! I added adobe chili pepper and chili pepper flakes to my bowl, and it was perfect! Jim said this was so pleasant with this weather. I poured it in jars for us to heat up for the next several meals.

I checked this book out from my library. The recipe called for chicken, but I had leftover hamburger to use up. I will definitely make this with chicken.

I am so impressed with the recipes in this book, I have ordered a copy so that I can make notes in it.

I added a side salad; cabbage/kale dish and a celery stick with sugar free peanut butter. What a pleasant meal.

Chaffel BLT

Chaffel BLT; I use a mini waffle iron as I like to keep the cheese low on my diet. I have made the 1/2 cup of cheese and 1 egg ones also, and they are delicious.

I use a mini iron, because I it’s easy, quick and a small sandwich. I used a special melting cheese I found at Meijers, but you can use anything. I precook bacon, chop it, and add to a container for using in salads, stir-fry’s and now chaffels. I add the bacon to the cheese, before closing the iron. That way, the bacon stayed in, and was part of the sandwich. I enjoyed the crunch of the sandwich. Delicious, easy and fun idea.

Keto Crunchy Granola

Game Changer for me! I just had a 1/4 cup of this with some strawberries and blueberries and a couple tablespoons of unsweetened almond milk. So delicious! I stored this in a large mason jar, in the fridge.

You do have to watch this closely; after the first 15 minutes, you stir and then watch in 5 minute increments – I put mine on a silicone mat – very easy to pour it directly in to a large mason jar, and store in the refrigerator.

I made a thank you meal for a neighbor, who helped us with a broken appliance. I added this as the side dish.

I will make this again, for us.

I added one more seasoning- Everything Bagel seasoning, because I love adding that to veggie dishes.
