Spaghetti Squash with Vegetable Tomato sauce

I collect older cookbooks, as well as the spiral bound church cookbooks. I especially like the books with notes near the recipes. I like to keep a page in the beginning part of books of recipes to try, based on reviews online, as well as the recipes I have made with my notes next to them.  

I added a lot of leftovers from the fridge. Just chop up whatever you have, follow the recipe loosely, and have fun with it. I added parmesan cheese and slivered almonds to the top, once I plated this. This is a delicious and very filling dish. We will definitely have this again.

Keto Crunchy Granola

Game Changer for me! I just had a 1/4 cup of this with some strawberries and blueberries and a couple tablespoons of unsweetened almond milk. So delicious! I stored this in a large mason jar, in the fridge.

You do have to watch this closely; after the first 15 minutes, you stir and then watch in 5 minute increments – I put mine on a silicone mat – very easy to pour it directly in to a large mason jar, and store in the refrigerator.

Tomato dressing

My favorite flavor in a salad is tomatoes; I like the smell of them; the taste of them; so, I make tomato dressing in the moment; I cut tomatoes up and let the juice run all over the salad; sometimes, I’ll use the juice of jalapenos, etc. I just use the juice of the veggie mother nature helps me grow; I also add a little flax seed oil with pepper; this is so filling

Top all of this with pepper.

No leftovers to store.

I think this toad in my garden is saying, “mine, mine, mine!”

Nantucket Cranberry Tart

This is definitely cranberry flavor, I had ice cream with it to help with the tartness of the dish. I like the taste of cranberries, so I’m good with how tart this was. I followed the instructions, and also added some orange zest and cinnamon. The almonds are a must; they are crunchy and flavorful in this tart. This is delicious. I will make this for a fish fry I go to during the summer.
