
One dish made on Monday is used to make several meals the rest of the week.
I made the spring pasta stir fry last year, and just made it again this past Monday. The veggie stir fry makes a lot. Tues, I add the leftover stir fry to the top of a salad. Wednesday, I used the leftover stir fry veggies to make the quiches – this is so good and very filling. Thursday and Friday, we will have leftover pasta stir fry and/or mini quiches
You can use this recipe for the quiche – I used a regular size muffin pan, and instead of using the quantity of veggies in this recipe – I winged it with the leftover stir fry from Mondays meal.
The quiche were good with piece of avocado on each; I also refrigerated leftover, and heated them with the avocado pieces still on for dinner for 20 seconds in microwave and they were still just as delicious as this morning. These are very filling. I would definitely make these again. Get creative with your mix ins. Try a variety of vegetable combos and cheeses.
